My Week So Far

It's been a busy week so far. Monday and Tuesday I had an exam in each class. So trying to study for that has taken a lot of my time. The exams went pretty well, I think. I should find out the grades today and tomorrow.

So now I am procrastinating getting ready for class. Which I really should do soon.

I am so excited because yesterday, Madea's Family Reunion, was released, I can not wait to watch the whole movie.

Tonight is church, and the Detroit Fireworks.

A Decision Made and Setting Goals

Thank you to all of you who commented about the template design. I think that I am going to stay with this one. I hope that you enjoy it.

Well I thought that I should share a few of the recent goals that I have made. Maybe if I share them I will be more apt to acutally accomplish them. So here it goes:

1. Clean my room.
Do I dare to set a date on this. Hopefully I will be able to do this by the end of the month. I need to figure out what stuff I will be moving to the apartment (when we get it), before we get married. So I really need to work at it. I actually started about two weeks ago, but all that I accomplished was making a bigger mess.

2. Read more.
Well I know that I read alot. However I need to expand, and start reading some of the classics. Which is why I started posting a reading list. Though I have started reading The Grapes of Wrath. And I want to read The Education of Henry Adams. If anyone has any suggestions I would appreciate it.

Well those are my goals for now, and I will try to post an update. Maybe with some before and after pictures of my room. lol.

A sprang and a new semester

Starting last Monday my knee hurt so bad, to move and then to walk, really anyway that I moved. The first few days I figured I had just moved wrong, but by Friday I had my concerns. So I woke up early that Friday and made an appointment with my doctor. To make a long story short, I sprang my left knee.

The doctor sent me home with my knee wrapped and medicine to reduce the swelling, which hasn't really worked as of yet.

Today also starts the new semester for school. I am taking American History until 1865, and American History after 1865. So we will see how this goes. I really like the history classes though. Well I hope that you have a Blessed Day!

Ok this whole week and practically the month has been a build up for today, well I guess it is after midnight, so yesterday. So is it a date that should be mark as "Of the Devil", or is it simply just another date on the calendar? What do you think? I have to say that I think it is just another day.

Do we give the devil too much credit? I mean to be truthful he is at work everyday. So does a date give him more power. I think not. I mean do you think the devil is schemeing especially for the date to have the right numbers in it?

But we sure did commercialize it, didn't we? I mean with Hell, MI having a big party and the Omen being released on the date.

I just wish that with as much that this date brought talk about the devil, that we can remember to give Jesus the same attention, everyday, not just on certain dates.

A Great Recipe!

Mexican Lasagna

Recipe Summary
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 4 servings

3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (14-oz) can stewed tomatoes or fire-roasted chopped tomatoes
1 cup medium heat taco sauce
1 (15-ounce) can black beans, drained
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Preheat the oven to 425 degrees F.

Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil – twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add stewed tomatoes or fire-roasted chopped tomatoes and taco sauce. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.

Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly.

A Much Needed Update~

Yeah well, so much for my promises of posting more often, and all of that. I am currently on my summer break from school, however I must say that it isn't much of a break. We have been watching my cousin's children for the past week or so. They are so cute and I love them, they just aren't to keen on the idea of sleeping in. I know that all of you mother's out there, just shook your head or something. Well I give honor to you all, honor that you well deserve.

Last weekend was the wedding of Joseph and Irene. I have to say that it was beautiful. And though I have said it already, I truely wish the couple the very best. Although Irene is gone to Arkansas and I will miss her very much, I won't stop praying for her and loving her. It was a beautiful wedding, and they both looked so happy.

This weekend was just as busy. Friday Night My dad, mom, sister and I went to the Tigers game. It was soo cool, because it is only like the second time I have been to a baseball game. They lost, which was kind of a bummer, and so did the Pistons that very night.

Saturday was a busy day too. I woke up at 7 and got ready, picked up one of my youth, and headed to our daughter work church in Roseville. We then passed out doorhangers around the city of Roseville. It was a good time. Then I went to a Sectional BBQ in Eastpointe. That was really a lot of fun, even if it did rain. Then I met Jacob at my house and we went over to my grandmother's house for dinner.

Though it was busy, it was a fun weekend. Now I am relaxing on Sunday, and shortly after I post I am going to go clean my room, Yipee. However it really needs done.

I do have to say that my one disappointment with this weekend, is calling my school to try to register for classes, and I was put on hold for 1 HOUR AND A HALF. I was so mad, and I still can't get in touch with the school. Its not like I want to talk to anyone, I just want to get my schedule, through the automated service. grr... Oh well I will work it out.
